Sausage and Peppers with Venda's Marinara

3 to 4 pounds sweet sausage*
2 medium red peppers
2 medium green peppers
1 large Vidalia onion
1 package fresh mushrooms, sliced
1 cup roasted tomatoes*
2 quarts marinara*
Garlic salt, to taste
Onion salt, to taste
Black pepper, to taste
Red pepper, to taste
3/4 cup tomato paste
* These ingredients are available at Venda Ravioli.
Preheat oven to 375 degrees. Place the sausage on a sheet pan, and bake in a 375-degree oven until golden. Remove and let cool. Cut sausage into 1/2-inch pieces.
Cut peppers and onion into large dice. Saute until soft. Add mushrooms and roasted tomatoes.
Place all ingredients, except for sausage, in a deep roasting pan. Add the marinara and tomato paste. Season to taste. Bake for 20 minutes. Add sausage to tomato mixture. Bake for 10 minutes. Serve over pasta or risotto, or use as a filling for a grinder sandwich.
