Costantino's Ristorante Sets Sail with New Passport to Italy Dinner Menu
 
Costantino's Ristorante is once again offering its Passport to Italy dinner program. Every month, the Federal Hill restaurant features a prix-fixe dinner menu from a specific region of Italy. The three-course menu is priced at $25 per person. It includes a choice of appetizer, entree, dessert, and a glass of wine from the region.
 
In February, the menu will reflect the cuisine of the region of The Marches. The Marches is a region of Italy bordered by the Apennines to the west and the Adriatic Sea to the east. The mountains are a good source of game. The coastline provides a bounty of seafood, usually cooked with tomato sauce. The region is also known for its very rich lasagne and two cheeses in particular: Caciotta and Pecorino. One of Italy's lesser-known regions, The Marches produce a number of crisp white wines and hearty reds.

Antipasti
 
Oliva All' Ascolana - Large olives stuffed with a zesty combination of meat and cheese rolled in breadcrumbs and fried.
 
Acquacotta di Verdure - A light chicken broth soup with day-old bread, diced ripe tomatoes, diced potatoes and chopped chicory.
 
Polenta con Fagioli Fave e Cavoli - Soft polenta topped with a thick stew of fava and cannellini beans, prosciutto and cabbage.
 
Secondi
 
Fregnacce - An Extraordinarily Simple Pasta Dish from The Marches - Pasta squares in a light broth, freshly ground black pepper and freshly grated aged Pecorino Romano.
 
Ravioli Pesaresi - Tasty spinach and ricotta ravioli that gain grace from lemon zest and herbs, finished in a simple tomato sauce.
 
Vincisgrassi - Layers of thick ribbons of pasta with traditional Marche meat sauce topped with mozzarella and a bechamel sauce. This baked lasagne is one of the region's signature dishes.
 
Baccala en Salsa Piccante - Salted cod with bell peppers, onions, capers, and black olives, finished in a light spicy tomato sauce with a touch of white wine.
 
Brasato Marchigiano - Thin slices of lightly pounded beef stuffed and rolled with prosciutto, then braised with white wine and fresh herbs.
 
Dolce
 
Teemarello - This simple dessert was very common in the monasteries and convents around Jesi in The Marches and was prepared whenever there was an occasion to celebrate, especially the marriage of the daughter of a farmer who worked with the monastery. It consists of an egg custard with caramelized sugar.
 
 
The Passport to Italy menu items are offered on Sunday through Friday nights in addition to the regular dinner menu at Costantino's. The restaurant opens at 5 p.m. for dinner. For more information or to make reservations, call 528-1100.
