Crucolo Crostini with Warm Apple Compote
| Crostini is usually served as an appetizer, but here it is in dessert form, pairing a savory cheese with tart apples. |

Combine the apples and all of the compote ingredients (lemon juice, brown sugar, water, cinnamon and cornstarch) in a small saucepan. Bring to a boil and reduce to a medium-low heat. Simmer until the apples soften and the liquid becomes thickened. Allow the compote to cool slightly before making the crostini. Brush the bread slices lightly with the butter and toast them on both sides, either in a skillet over medium heat, or in a toaster/toaster oven. Place a slice of cheese on each crostini and top with the warm compote. |
